{Easy Family Meals Post 1} Steak, Tomato and Blue Cheese Sandwiches

I have been having such a hard time figuring out dinner lately. We often resort to takeout which is becoming rather expensive. Spending my days chasing a toddler and working from home is exhausting so I am always looking for easy recipes. I’ve decided to try and share some of the easy family meals recipes I’ve found with you in a new monthly post!

I am a total magazine junkie and had flagged this recipe in Woman’s Day to try it. It’s a steak, tomato chutney, and blue cheese crumble sandwich. I was able to grab the ingredients from Healthy Living Market, which was great, and throw this together rather quickly, like around a half hour or so. It also makes delicious cold leftovers! Here’s some pics from the process and the link to the recipe can be found after them.

Yum, yum, yum! The finished sandwich! To make the bread toasting easier I just put the bread slices right in our toaster.

Some of the things I did differently from the recipe…

I didn’t have the cider vinegar, so we just used white/regular vinegar

I’m not a raisin fan, left those out, but they are probably really good in there

Also, subbed spinach for the watercress, because I needed spinach for later in the week for a different recipe

For side dishes we just made roasted broccoli with some cheddar cheese on it & some stuff mushrooms.
(We ate the green beans from the first picture the night I bought the groceries, whoops)

The tomato chutney is very versatile. You could easily make more family meals using just the chutney and a few ingredients. It would be really good over pasta or even over chicken breast with a little cheese.

That Gelato Fiasco is to die for!! It was a salted caramel dark chocolate gelato. Divine!
